Looks can be deceiving when it comes to our local TOG pizzeria Fierro’s at 2524 Route 9N. If you thought it was your average Upstate strip mall pizzeria, then it is time for you to revisit this little gem. This Greenfield specialty restaurant is packing some big surprises.
The second you meet owner resident Zach Cutler you will be overcome by an enthusiasm for “all things pizza.”
“I have always loved pizza,” Cutler said. “I could eat it every single day and I’d never be tired of it.”
Cutler has been in the industry for more than 20 years. His passion, along with his bachelor’s degree in Culinary Arts from the Culinary Institute of America, inspired him to take this pizza shop to the next level. From the science behind the ratios of its simple ingredients to the creation of delicious menu items, Cutler takes this business very seriously. Did you know that Fierro’s employs a full-time “pizza man?” Dean Jordan is nearly always onsite, putting his 31 years of pizza artisanry to use. Jordan is charged with the entire pizza process from the dough to the assembly and cooking.
Pizza Man Jordan is proud that Fierro’s pizza is “some of the best NY-Style pizza in the area.” He is happy to talk shop, explaining the truth behind the “New York pizza” term, from its cooked sauce to its thin and crisp dough cooked to perfection. Jordan said employing a full-time pizza making connoisseur is a “dying art” but one that makes all the difference.
Cutler said the entire staff of 12 contributes to the pizzeria experience at the shop, with its more than 100 years of combined experience. “We are all about the total team effort at Fierro’s and every position is as important as the next,” he said. “Whether you are working the dish station or making the pizzas each and every employee is essential in delivering the best possible customer experience.”
Fierro’s has a dedicated “dough room” in the corner of the restaurant, where at times more than 300 pieces of dough are carefully constructed daily. During our short interview, Jordan brought out some rising focaccia to confer with Cutler and it was if they were absorbed in a science experiment with their discussion of “dimples” and how long to leave the dough to rest — before the ingredient testing begins.

Did you know that Fierro’s keeps some take and bake options in a small refrigerator inside the door? Call ahead to request your favorite. For $20, you can bring home a ready to bake pasta dinner of your choice. There is an assortment of fresh baked desserts for purchase like key lime pie, red velvet or chocolate cake and even fresh cannoli prepared onsite.
The Art of the Entrees
At any given time, there are a dozen fresh specialty pizzas to choose from by the slice. The pizzas are 6-cut, which makes for an enormous slice of pizza. Cutler said 90% of his business is carryout. The most popular, aside from the traditional cheese and pepperoni, is chicken bacon ranch. The newest menu item is a hot honey pepperoni pizza, made with homemade hot honey, cup and char pepperoni, oregano, mozzarella and tomato sauce. Any specialty pizza can be made into a Stromboli or calzone. Other menu items include chicken wings, loaded fries, salads, sandwiches and entrees like eggplant parm, chicken parm, lasagna and more. You can be sure that these traditional Italian dishes will not disappoint, as they have been thoroughly vetted by Cutler himself.
Every single item that has been added to the menu goes through a major process from concept to taste testing to establishing the production schedule and costs. It takes Cutler about a month or two for each new item and he is often testing his concepts with his regular customers. This hard is work is paying off. Cutler said Fierro’s has experienced a 30% increase in sales since he purchased the business.
Cutler has made major renovations to the 2,400-square-foot restaurant since purchasing it in 2021. Custom wood shelving quaintly houses floor to ceiling pizza boxes and a brick archway opens to the dining room with a rustic Italian décor. Local artist Claudia Vinciguerra has featured modern pop culture wall paintings of things like tomatoes, pasta, peppers and a motto of “Life is short, eat the pizza.”
Cutler purchased the successful pizzeria in 2021. It originally was opened in 1991 by the Fierro family. Past owner Maureen Taglia Fierro, still manages the shop daily. Cutler still uses the same dough and sauce recipe created by Maureen’s family. Although her children, who once staffed the shop are now all grown up successful professionals of their own right, she is still happiest helping contribute to this business. Cutler is actively seeking new location opportunities to expand into other communities.
A Greenfield Family
Cutler has lived in Greenfield for seven years, having recently purchased home on seven acres. “We love the country quiet of Greenfield,” he said. “We love the people and the hometown neighborhood feel. We love being a part of the community and feel lucky to raise our children here.”
Cutler has been married to wife Shannon for eight years and they have three daughters: 14-year-old Sophia, seven-year-old Sahara and one-year-old Lucia. The entire family loves getting involved with the business, especially with the new woodfired pizza trailer.
Woodfired Pizza Trailer Brings Hot Pie to Your Event
The three-year-old pizza trailer currently serves approximately 200 private parties a year. It requires a 50-person minimum and costs $1950 for unlimited, baked-on-site-woodfired pizza during a two-hour time period. Cutler said his favorite new pizza trailer menu item is a Maple Breakfast Pizza, consisting of cheddar, mozzarella, bacon, scallion, egg and Greenfield’s Twin Leaf Maple Syrup.
Greenfield Community Involvement
Fierro’s has always been a family business that is super involved with our Greenfield community. Campers at the TOG Summer Camp at Maple Ave. Middle School will enjoy two lunches courtesy of the Fierro’s pizza trailer this summer (July 3 and July 17). Greenfield’s Recreation Department will be expanding the summer TOG Farmers Market this summer and FIERRO’S PIZZA TRAILER WILL BE SERVING ITS SPECIALTY WOODFIRED PIZZAS ON July 18, August 22 and Sept. 12. The TOG Farmer’s Market will take place from June 20 to Sept. 19, Thursdays from 4-7 p.m.
